Zucchini



These are from our neighbors and I have never seen, as Catherine says, such "ginormous" zucchini in my life. I drove by our neighbor's house just in time to catch their 12 yo boy with a broken wrist (in cast) about to carry a huge bag of these with one hand a quarter of a mile to our house in blistering heat... bless his heart. Since I was going the opposite direction of our house, he offered to take them down to our porch for me. I thanked him profusely and told him he didn't have to do that in this heat, I could take them with me, no problem... but I arrived home to find a HUGE bag of tomatoes on our porch. ;) I made fresh roasted tomato soup for dinner, with grilled cheese sandwiches. Yum.

Any ideas on preparing zucchini "steaks"?? Just one of these will feed our family of eight for one meal, and we have eight of these!

Is that a zucchini? It looks cool with the stripes. It must be a different kind than the ones we grow in our garden.

Yes, it's a zucchini, and I've never seen them this HUGE. We had a very dry year and nothing did well except tomatoes and zucchini... but those two were very prolific!

Hi I just found your blog.

I don't know about zucchini steaks, but I make zucchini relish (which is delicious with pinto beans and cornbread), and shred the zucchini for use in zucchini bread... freeze or can the shredded for later use.

Those aren't zucchini, those are Little League baseball bats. LOL

I haven't seen any that big in years. What Laura suggested was a good idea. If you need a zucchini bread recipe, let me know and I will ask my mom to e-mail me a copy of hers.

Stay inside as much as you can -- I know you're not accustomed to it, and I'm not either. This is the hottest it has been in this area since July '99.

i would go by way of a casserole with cheese and crumbly topping, but then again since we are watching our calories and you may have issues with milk (allergies)...

I like to shred zucchini and make lots of zucchini bread to freeze. You can use zucchini to make an apple crisp but with zucchini instead of apples. I have a recipe for zucchini soup, too. It sounds weird, but it's really good! It tastes kind of like a creamy potato soup but w/o the potato. Oh, I also forgot that I have a recipe for the BEST zucchini bars ever! They're not chocolate ones, but are like a white cake with cinnamon frosting. DELICIOUS! Okay, so those aren't zucchini steak recipes, but if you want any of the recipes I mentioned, let me know!

Penni, our lactose intolerant gal has found she can have cheese... if she drinks kefir at the same time! Apparently kefir has an enzyme (lactaise) that she lacks.

Melanie, I never thought of using them in a *dessert*! I'd love the recipes.

Julie, I'm actually used to 100+ temps in August, so this summer feels kinda cool to me. I'm not used to this much humidity though. I'm glad today is better! :D
